Description of changes:
Update Buildroot to 2025.05.1. Also switch to kernel 6.1 headers, now that 5.15 is gone downstream.
There are newer versions of Buildroot available, but this is the one I've been testing for the last few months, and moves us closer to the latest stable release.

Built kits and variants.
