Update buildroot kernel hash from 5.10.232 to 6.1.122

Description of changes:
Update the bundled kernel headers to the latest 6.1 kernel supported by buildroot bundled in the SDK
Testing done:
Built a kernel/core-kit and AMI with this SDK and validated basic functionality. The instance joined the cluster and was able to launch workloads correctly.
