docs: fill CHANGELOG [Unreleased] and BENCHMARKS numbers#28

Expand the CHANGELOG [Unreleased] section to describe the full pre-release surface (core, CLI, ten bindings, golden corpus, tests, fuzz, benches, CI, docs). Replace the BENCHMARKS placeholder with measured criterion figures for prove (200/1000/5000 bars x ~2/~10 indicators) and canonicalize (small/large report), plus throughput and the scaling takeaway.

[Unreleased]Addedsection to describe the full pre-release surface: proof-core (spec/proof/canonicalize with the byte-exact hash + recompute-not-trust verify + engine pin), the CLI, ten language bindings, the golden corpus/tests/fuzz/benches, CI across all languages, and the docs.proveat 200/1000/5000 bars × ~2/~10 indicators (~150–177 K bars/s) andcanonicalizeon a small (168 µs) and large (4.75 ms) report, plus the scaling takeaway. Measured withcargo bench -p proof-benchon a Windows x86-64 laptop.
