docs: sync current project status

Summary

• Reapplies the docs sync changes that were pushed after PR [codex] add north-star audit #69 had already merged.
• Updates stale status claims across root docs, package READMEs, architecture docs, production-path docs, demo docs, subagent docs, tasks/audit.md, and tasks/todo.md.
• Leaves historical archive docs unchanged.
