So, I have some potential differences, but I think it makes sense to approve this as-is and then make those suggestions as an additional PR or two.

I guess merged into this branch first would be a cleaner history on main, but I don't really mind either way. i.e. You can take ownership and merge this first if you'd like |

We probably _can_ use GHCR, But Kamal 2.8 adds support for a "local" registry, which should be adequate until we need access to these container images for anything other than deploy.
Technically, you can run Kamal from elsewhere and specify `-c <config file>`.
I _do_ think deploy via Jenkins is the way to go eventually. But an MVP can just be deploying more-or-less the way we do with Capistrano.

@werebus I'm not sure how much this overlaps with what you're working on/if this is duplicated effort but this is what was sitting on my machine locally
