fix(opcua-docker): update opcua image and include podman instructions

Proposed changes

Update the opcua-docker example with:

• Update the image to ghcr.io/thin-edge/opcua-device-gateway:20241107.1636
• Include podman/podman-compose instructions and a compose file which is compatible with podman
