Due to anaconda/2025 module update

Purpose of this PR

As noted by members of PIK ITS environment modules anaconda/2023.09 and anaconda/2024.10 have been removed from PIK HPC in Dec '25. The proper env module for conda use is now (entirely miniforge-based) anaconda/2025. This PR enforces the use of the matching piamenv version
