POC: Event Driven DFMM Sim

• This is a poc for an event driven DFMM sim workflow using the new arbiter-engine crate.
• Note that upgrading to the latest arbiter versions was not backwards compatible with the current release of excalibur, so in order to get this pushed up and passing checks I had to nuke virtually the entire repo. We need to do the upgrade on a separate branch and get the changes into here at some point.
