Update deps, r3f up a major version. Also note react v19 & next v15 updated from react v18 & next v14
note: tailwind dep not updated to new major release, can do at a subsequent time.
Remove forwardRef (deprecated by react v19 - see: https://react.dev/blog/2024/12/05/react-19#ref-as-a-prop & https://react.dev/reference/react/useImperativeHandle)
Tested in dev and build/start, all functionality maintained, including all 100 lighthouse.
