Update README for V2 API and new device support#104

Reflect the V2 API migration: HMAC-SHA1 signing, MFA support, refresh tokens, custom exceptions. Update device compatibility list with all supported devices (HS200, KP200, KP400, KL420L5, KL430, EP40, KP125). Add usage examples for new device categories (light strips, outdoor plugs, switches). Update testing section for V2 WireMock stubs and docker compose syntax. [#99]
