This PR updates the demo to be up to date in 2026

  • update O3DE version 2310.2 -> 2605.0 (pre-release)
  • update ROS 2 launcher from Galactic/Humble to Humble/Jazzy
  • update build instructions to use SDK instead of source
  • update build instructions to pull o3de-extras release instead of the source
  • update instructions to use GameLauncher instead of the Editor if not needed
  • add mouse disable registry
  • remove unused reflection probes to reduce the size
  • redo Dockerfile to follow the same changes as in the updated build instructions
  • add preview image

The project was built using the updated instructions locally (Ubuntu 2404 with Jazzy) and in Docker using both Humble and Jazzy.

Marking as a draft: the link to pull the SDK needs to be updated after 2605 release.
