Add libhandy to shared-modules

Libhandy will be removed from the GNOME 51 runtime.

Adding it to shared-modules would ease maintenance and reduce duplication.

Since the libhandy module is already provided by GNOME runtimes, I couldn't find a clear number on how many applications depend on it.

I will document some of them in this comment. This is not a complete list and will be updated frequently.

I have documented 13 applications, 2 of which might be EOL.
