ci(release): stabilize workflow headings

Follow-up fix for the stable release workflow after PR #4.

Changes:

• Keeps the verbose Release x.y.z details in step summaries.
• Makes job names static so the workflow validates reliably on GitHub.
• Keeps the stable version text input defaulted to 0.0.1, while documenting that it is ignored unless version_bump=manual.

Validation run locally:

• pnpm docs:build
• pnpm readme:check
• git diff --check
