- Corrected regex to annotate mitochondrial genes from"^MT" to "^MT-".
- Updated R version to 4.5.
- Bumped version to 0.7.5
Updated mitochondrial gene detection regex to include negative prefixes.
Added additional dependencies for building and development.

Removed unnecessary packages and added gcc, nodejs, and npm. Adjusted installation commands and environment variables.
Removed HighFive from the list of packages to install.
Updated GitHub Actions workflow to use newer action versions and streamline Docker image build process.
