docs(readme): show capabilities instead of provider list#56

Replace the per-provider table on the homepage with a capability-level overview (Web search / Web scraping / On-chain / Social & content) and point readers at find_tools for the live provider list. Providers are too many and rotate too often to keep the README in sync. Also drop remaining Xiaohongshu / 小红书 mentions from the README and use-case table.
