New Cypress Install + e2e-simple workflows

New install of Cypress, had to work through a couple issue as you already had a reference to an old version in your repo, but all is settled now. Also install the e2e-simple workflow that can be kicked off to test.

Looks good, thanks! I'll update the structure a bit to fit better in the monorepo, and remove the default tests as 3 were failing during my local test run.
