example.com couldn't be pinged from my machine by any means, retried reboot, router restart, and firewall exceptions but to no vail. I am able to ping any other website BUT example.com which stops the server from booting up stating that I do not have an internet connection while I HAVE an internet connection.

There is a config setting that allows skipping the check in the case where your internet provider has an issue communicating with one of the check sites and you dont feel like reporting connection issues to your internet provider to fix

I just found that out through a bit of digging, it would be good to consider using a different DNS still in case it happens to somebody that doesn't have the time to go through the source code and look for a solution to override the check.

it is literally in the config file that you also configure the ram and other settings of the launcher

Dns should be set on your internet connection settings. issues with connectivity to certain sites should be troubleshot through the service provider that provides that connection
