Bucket C from workflow#764 sweep. Adds internal/version.go (or fixes existing Version sentinel), bumps workflow to v0.62.0, wires sdk.WithBuildVersion through sdk.Serve/ServePluginFull, adds validate-contract --for-publish gate to release.yml. Pilot: GoCodeAlone/workflow-plugin-analytics#6.
