chore: Bump acme-companion and nginx-proxy versions

Description

This pull request updates:

• nginxproxy/nginx-proxy image to 1.10-alpine
• nginxproxy/acme-companion to 2.6.0

While testing proposed changes I was able to:

• deploy a FlowFuse Platform on docker with TLS enabled
• start Hosted Instance and deploy a Node-RED flow
• deploy a dashboard on a Hosted Instance and access it with instance's domain
• onboard a Remote Instance
• enable developer mode, create and deploy Node-RED flow
