Adding updates to make things simpler to spin up new instances of DickieBot2

This drops the Python 3.11 specific changes to DickieBot.py, but rolls in most of the other QoL updates beyond the one I screwed up, mentioned above, which is currently in a separate PR. |

I screwed up and added the log/.gitignore in the wrong branch, so merge this before that
