docs: rename sdk-docs-generate workflow to sdk-reference-docs-generate

Description

Renames the SDK docs generate workflow file and internal references to include "reference" — since this workflow generates SDK reference docs, not general SDK docs.

Changes:

• sdk-docs-generate.yml → sdk-reference-docs-generate.yml
• Workflow name: SDK Docs Generate → SDK Reference Docs Generate
• Concurrency group: sdk-docs-generate → sdk-reference-docs-generate
• Event type dispatched: sdk-docs-update → sdk-reference-docs-update

Note: The corresponding crossbit-main PR updates the receiver workflow to listen for the new sdk-reference-docs-update event type. Both PRs must be merged together.

Test plan

• Verified all internal references (event type, concurrency group) are updated consistently
• No functional logic changes — rename only

I'm working on a automation for keeping our sdk ref docs up to sync and date. I'm in the middle of debugging my pr's that a test run has created for the wallets sdk https://github.com/Paella-Labs/crossbit-main/pull/26056/changes

Please review and make any changes necessary to our script generator in the wallets sdk (will be /crossmint-sdk/packages/wallets/typedoc-custom-plugin.mjs file) main issues are things like the paths not being correct (most of the old changes in that pr are correct i believe). Also just make a pr against the branch sdk-doc-sync-action as that branch is what i'm using to test the automation/action.
also for the getting started page maybe we should keep it what it currently is where it has the Latest Node.js SDK version and the badge link to the npm package.
