Thanks for this! We just changed the Sim's CI to run on 3.9, could you change it here as well instead of 3.10.10 |

This PR addresses Jira ticket CISLUNAR-###
Python 3.7.5 is no longer on GitHub's servers, meaning the pytest check always fails. This should fix that
