feat: Add overall time to logging plugin

Overview

As per feedback on the community call, it would be nice if the logging plugin had the overall time of the request lifecycle in the context data.

Some research is required to figure out the best way of doing this and considering how we update all records with this data or is it just the event when the response is returned.

Adding this to the GA milestone as potential feature we could add. We can add a custom processor and maybe we only add this to the response context data.

We could also add the current ms time to all other events too
