Exclude a table from purge

Is there a command option to exclude purge of a specific table (like --purge-exclusions available on basic Symfony fixtures bundle) or any other way to do it ?

There isn't, but if it is available in the Doctrine fixtures then it should not be too hard to add. PRs are welcome!
