Defaulting --pglite to true in the generate command so users don't need a running postgres instance. Will also expose --no-pglite as an explicit opt-out for connecting to an external postgres via DATABASE_URL.

Plan:

• inspect the generate command path and how it currently requires a running Postgres instance
• default generate to use pglite so bun run db:generate works out of the box
• add an explicit opt-out path for external Postgres if the repo already supports one
• run the smallest relevant verification and then open a PR with @algora-pbc /claim #2 in the body

This updates the generated db:generate script to use pgstrap generate --pglite, updates the init test, and refreshes the README copy for the new default behavior.
