Restructure logs for splunk parsing

Splunk is parsing every single line from the STDOUT into it's own event. This makes it hard to search, filter, and view errors. The logs need to be formatted so that Splunk can parse them. JSON maybe?

Also, check if this is an issue in workflow. We should add a GH issue there and fix that if so.
