Be Able To Set API Version

I would like to be able to pass this version header to specify which API version to use.

Great request! I'm kinda surprised we haven't added that already. I'll see about getting that in there!

Would this override the API versions set in the OAuth Application Details or error if not the same?

The one passed in the header overrides the default version set in the OAuth app.
