[Feature Request]: Speed up regridding with GPU support

Problem

@hanaol in my group has been interested in speeding up the regridding process by updating pyrho to have GPU support (especially with FFTs). We are considering CuPy and potentially xarray. I'm just opening this issue report to keep this out in public. @hanaol will open a PR if/when we make progress!
