not sure how to use sign and verify methods

trying to use hyperlog with @Substak signing example and i am not really sure how to use it.
once i include a identity: keys.publicKey in the log options, what does that do with the stored keys ?
When does the verify method is invoked to check the signature ?

identity is just a value that will be added as a key/value to every hyperlog node that's created. It's then your responsibility to write the functions sign and verify that use that value to sign and verify node, respectively. verify gets invoked as new nodes are added (either locally or remotely via replication), which can be at any time.

@noffle thanks for your kind reply. i have been digging into hyper[*] and getting a better undertanding of the merkle tree and it's DAT implementation's as well.
