Flexible paths for schemes

There is a problem:
When we change the names of schemes, prefixes or versions, we also need to change these names in the epp-xml gem. This is not a good practice in my opinion, because it complicates the work and makes our every action dependent on other aspects of development.

I propose to make the paths more flexible, where we will set paths in third-party services where this gem is used.
