Cleanup the repository

I plan to cleanup the project by:

- [ ] Removing files that were accidentally included `.bak` files
- [ ] Adding documentation on which Logstash Plugins are currently supported and to what degree
- [ ] Make sure legacy (direct?) dependencies are removed
