Support multiple yaml files

Hello there,

I've been experimenting on your great plugin but I have trouble using multiple openapi yaml files in my tests. Looks like the only way to set the file path is through the openapiPath env variable. But since I need to mock responses from multiple backend services, I need to be able to use multiple yaml files. Is this possible in a non-hacky way?!

I believe I had to mention that I'm talking about the cypress-mock-openapi plugin! 😆
