[Bug]: Cartesian plotting axes not displaying properly

What happened?

Plotting with dipole seems to work okay, but on a Cartesian grid I get stuff like this:

I suspect the data may need to be transposed prior to plotting?

I'm still having issues with this and it's making some debugging challenging. @mattzett , mind if I take a crack at fixing it?

Created a PR to fix this (#30). The underlying problem was that the Interplator was originally constructed with the arguments (z, x), but then later called with (x,z) (and analogously for the lat/alt plot). The interpolator was then trying to fill a grid that exceeded the original data, leading to the large white space.
