Make vignettes lightweight enough for pkgdown / github runner

Currently, the vignettes have the execution flag set to disabled. This is because (presumably, don't have time to set up an investigation for the syslogs) the github runner is going OOM and killing the quarto process without leaving a useful log.

This issue should resolve the problem by making the examples much more lightweight, e.g. with bundled data.
