[Workflows][9.3 & Serverless][Phase 2]: Open questions about transforming data using liquid filters

In the templating engine docs, we indicate that liquid filters can be used to transform values. Are the filters provided in the example the only ones supported, or are there more? If there's more, we should provide a list or link to that information (if it's published and maintained elsewhere). If we only support the ones in the example, we need to call it out in the docs.

Notes from today's discussion with @tinnytintin10 and @natasha-moore-elastic:
Elastic Workflows support all available LiquidJS filters, not just the ones in the example. @nastasha-solomon will add line to the Apply filters section conveying this and linking to the Liquid JS filter docs.
