Update choco-theme and it's dependencies to their latest minor or patch versions.

User Story

As a developer of choco-theme,
I want to know that choco-theme is using the latest minor and patch versions of it's dependencies,
so that I can have confidence in the packages security and bring in new bug fixes and features.

• Astro and it's dependencies are updated to their latest versions.
• All dev and prod dependencies of each choco-theme package are updated to their latest minor or patch verisons.
• All workflows pass on the PR.
