Subject: [PATCH] Exemplar updates since 2026-04-30

Annotated the vcpkg example code block in CONTRIBUTING.md as `shell` to satisfy markdownlint.
Added GCC 16 to the CI matrix and updated the supported-platforms table in README.md.
