your the best api simulator ... except for one fonctionality : log all api simulator call's and answer ?

could you add an functionnality to follow all api simulator calls' ?

• first step : into logs (i have search to have this informations into logs but without success )
• final step : like this : https://www.mock-server.com/mock_server/mockserver_ui.html

Enabling debug level logging as described here will output that information and (way) more. It isn't pretty but it can be helpful during simulation modeling and troubleshooting.

Take a look also at Access Logging, if you haven't already. It isn't exactly a detailed logging of all requests, replies, and request matching but may be useful for some use cases.
