chore: remove end_of_line from editorconfig (#2635)

The `end_of_line` setting causes issues on Windows machines that have `autocrlf` set to true (the default): https://git-scm.com/book/tr/v2/Customizing-Git-Git-Configuration#Formatting-and-Whitespace
