Allow for M x N  inputs in functions such as transform_cartesian_coordinates

Currently functions such as transform_cartesian_coordinates accept as input one array for each of the Cartesian components of the vector. It would be useful to also allow for input of arrays in which each row is a vector to be manipulated.
