UTF-8 Thirst and Temp bar

📍 What problem do you want to solve?

Some clients still won't render the Thirst and Temp, not even showing white squares. This especially happens with earlier clients or with ViaVersion

💡 What would you change, add, or modify to solve the problem?

My edited config uses UTF-8 supported characters so it should be wildly supported.
I'll include the whole config file below:

🌐 How do you see your suggestion benefiting the majority of servers?

I edited the toughasnails.yml config file so servers that use ViaVersion or used to have problems with the HUD can now view the HUD with less issues, hopefully.

If you don't want to replace the whole file, at least have an alternative config file that can be downloaded and easily replaced or a similar method.
