No support for Mac Silicon in Docker download

I've started automated arm64 builds, until such time as they do official builds. Currently checks every 2 hours for a new release and builds automatically if there is. It takes 1hr 20min to build on GitHub Actions Runners, so, if there is a new release it should be available on my Docker Hub within ~1-4 hours.

Interestingly, the container freezes for me during PDF processing (unstructured_inference INFO Reading PDF for file:) when running with linux/amd64. It works with @robwilkes container, though. Thanks for sharing!
