App: Create colour constants file

We use a lot of our colours in several different places, so it's probably a good idea to have a centralized file full of hex values for these colours that we can reference in other places around the app.

Make the file, check the code and figma for colour values used in multiple places, and move them over to the file. Put this file in the newly-created stylesheets folder.
