What should be tested, what is supposed to work out of the box?

Suggestions:

• http is reponding with the admin interface
• no known security hole Ex: remove pi user default accound inherited from raspbian image #1

(bind9 shouldn't be running though, as it has been replaced by dnsmasq, so this one should be running instead)

I guess so, but I'm not a CI afficionado neither a rasp-pi one, so I can't help you for this...
