Provide more nuanced progress

Switch from 'True/False' boolean type for an item status to something more nuanced like 'Todo/Doing/Done' to allow for progression

While an enum is likely the best solution to this, I'm currently making it out to be more complex than it likely is in my attempt to implement it.

Temporary way to get this to mvp is just to do a simple string match for the three states of an item.

• implement an update method in place of "completed" function.
• match on the current value of an item state
• update item state to next status

Ideology questions:

• Should you be able to roll over from "done" back to "todo"?
• As entries are identified by strings, should you be allowed to delete an item? This would allow you to reopen said item under the exact same wording.
