Incompatible with beet beta branch

Pydantic V1 functionality isn't compatible with Python 3.14 or greater.

All "pydantic.v1" imports should be changed to "pydantic",
this would allow the Smithed Python package to be compatible again.

There are also a few breaking changes (e.g. root_validator from pydantic):
Only `smithed/weld/models/main.py` is concerned I think
