Docs Request: Add a table of dataframely version vs. minimum Polars version

Trying to manage dataframely and Polars version upgrades together is challenging. Would be nice if the docs showed the minimum version number of Polars for each version of dataframely.

Fair! So far, we've been bumping polars pretty freely, we should also think about being a little more backwards-compatible... unfortunately, polars still frequently changes behavior for existing functionality (esp. if marked unstable which we use in a few places).

That all sounds totally fair - tough (but exciting) space to be working in.

Visibility is probably the lowest-hanging fruit for letting people use your product while also maintaining their own internal dependency bump schedule.

CI tests over multiple Polars versions would also be amazing!
