FEAT: Log confidence and data location

Problem Description

The user needs to be able to verify the output of the program.

Feature Description

For Classification:

• The program should log how confident it is in the classification of a specific document for the user to see.

For Data Extraction:

• The program should note where it pulled the information from (page / line or figure number) and make it available to the user.
