First of all, congratulations for the project.
I think it would be very helpful to add a few screenshots and/or short videos showing the configuration process. While the documentation is already detailed, visual examples make it much easier to understand the expected settings and follow the setup steps correctly.
Some useful areas could be:
Initial setup
Display configuration (playfield/backglass/DMD)
Controller setup
Audio configuration
