A simple control with a coarse-grained and wide slider should do the trick. Pen tablet input isn't made for pixel-perfect movements. Changing the stroke width by 1pt should require moving the slider about 5mm on screen. Maybe 30pt or so. For mouse input, an up/down arrow toggle should do the trick.
